Spicy Pork Tenderloin

Ingredients

  • 140g pork tenderloin, thinly sliced
  • 100g jasmin rice
  • Korean chili paste (Gochujang)
  • 3/4 Tbsp brown sugar
  • 2.5 Tbsp soy sauce
  • 1/2 Tbsp sesame oil
  • 1 garlic clove
  • 1" ginger
  • 1 large carrot
  • Sesame seeds
  • 0.5 Tbsp rice vinegar
  • Vegetable oil
  • Salt

Instructions

The marinade

  • In a bag add thinly sliced pork tenderloin
  • Add 2 Tbsp soy sauce
  • Add 3/4 Tbsp brown sugar
  • Add 1 tsp of Gochujang
  • Chop 1 garlic clove and add it
  • Chop 1" ginger and add it
  • Let it marinade for 20-60 mins

Cooking

  • Cook rice how you always make it
  • Cut a carrot into thin planks
  • Remove pork marinade onto a plate
  • Add 1 Tbsp vegetable oil in a large pan over medium-high
  • Cover skillet with pork
    • It's okay to do it in two batches
    • Fry for a min on each side until
    • Remove to a plate and repeat with the remaining pork
  • Wipe out skillet
  • Add 1 Tbsp vegetable oil
  • Cover skillet with carrots
    • Cook undisturbed for 2 mins
    • Turn them and cook for another minute or two until soft
    • Remove to a plate

Plating

  • (optional) In a small sauce plate
    • mix 1 tsp soy sauce and 1 tsp rice vinegar
    • spread the mixture over rice
  • In a deep plate or a bowl
    • Add rice
    • Add meat on one side
    • Add carrots on the other side
    • Sprinkle some sesame seeds
    • Serve with additional chili paste
