Lomo Saltado

Ingredients

For 2 person

  • beef steak (rinder hufte) 250-300g
  • 0.5 medium red onion
  • 0.5 medium tomato
  • 2cm ginger
  • 1 garlic clove
  • 130g rice
  • 300g fries
  • 0.5 or 1 red chili / aji amarillo (or 2 tsp. aji amarillo paste)
  • 1 Tbsp. light soy sauce
  • 1/4 lime
  • salt
  • pepper
  • vegetable oil (eg. canola)

Instructions

Preparation

  • cut meat into strips and then cubes, 3-5cm long
    • season with salt, pepper, a little of cumin, and lime juice
  • cut onion in small slices
  • cut tomato in small slices, optionally remove seeds
  • cut chilli into small cubes
  • combine aji amarillo paste, soy sauce, and minced garlic

Rice

  • Add rice, 200ml of water to a small cooking pot
  • Cover and bring to boil
  • Lower to medium-low and let it cook until all water evaporates
  • Fluff the rice
  • Keep covered until serving if rice doesn't feel cooked enough
  • Serve on the side

Fries

  • Put them in the oven at 180 degrees (with fan) for 20 mins
  • Shake after 10 mins

Meat

  • Cover heavy skillet with oil, bring to hot
  • Put meat and spread it in pan
  • Salt the meat
  • Don't move it for a minute to get nice crust
  • Turn it and cook for another minute
  • let it leave residue in pot which will be used for sauce
  • remove to a plate

Final steps

  • To the same pan, add a bit of oil
  • high heat
  • Add onions and fry for 1-2 mins
  • Add tomato, chili and fry for a min
  • Add meat
  • Add sauce and reduce heat to medium
  • Let it all come together for a min or two
  • At the end add fries
  • Enjoy
